Didn’t make it to Italy this Spring? Nor did we. But you can still hang onto to your memories of the long, sultry days by drinking what the cool kids in Rome were quaffing al fresco. This sunset-hued drink makes a lovely aperitivo and is light enough to serve at brunch.
3 parts dry Champagne or Prosecco
2 parts Aperol
1 part sparking mineral water or seltzer (extra points for San Pellegrino)
1 teaspoon of simple syrup (if you like it on the sweeter side)
Pour over rocks into a tumbler or balloon wine glass. Garnish with a twist of meyer lemon or slice of orange. Ciao, bella. —
